Teriyaki Chicken with White Sauce

As I have mentioned in the sparse posts before, I'm pregnant. With that being said, my morning all-day sickness has given me a total aversion to food. For a cook, this is not a good thing. So when I actually have a craving, I take full advantage.
For the past couple of weeks I have been really wanting some teriyaki chicken, but the problem with this is that I have to have the white sauce that they serve in all the Japanese restaurants. I had searched high and low for a recipe, and always came up empty handed.

Today was my lucky day! Google is my best friend!
(I'm sooo sorry that I don't have pictures. I fail)

Teriyaki Chicken with White Sauce

Chicken:

  • 1 (10 oz) bottle of teriyaki marinade (I had a few bottles of Annies Naturals, organic teriyaki marinade left over) 
  • 3-5 chicken breasts, cut up into bite sized pieces
  • 1 medium onion coarsely chopped 
  • 1 T Oil
White Sauce: 
  • 1 1/4 cup mayo
  • 1/4 cup water
  • 1 t tomato paste
  • 1 T melted butter
  • 1/2 t garlic powder
  • 1 t sugar
  • 1/4 t paprika
  • dash cayenne pepper
The night before cooking, place the chicken in a ziploc bag and/or bowl along with the marinade. Let sit in refrigerator overnight. Also, the night before cooking, mix all white sauce ingredients in a small bowl, cover, and chill overnight. (the sauce WILL NOT taste right if not allowed to sit.) Bring to room temp before serving. 
When ready to cook, place oil in a large skillet; Add onions and sauté till tender. Spoon chicken out of marinade, into skillet. Cook over medium high heat until chicken is cooked through (about 5- 10 minutes).
Top chicken with white sauce and serve. 
(this is really good served over rice) 

Product Review: Horizon's Organic Milk

As have said before, I always go down the organic aisles to see what items are on sale. Well, this week I noticed that Horizon's Single Serve Organic Milk was on sale 10 for $10! That's really an amazing deal for this area. Usually these run at almost $2 each.

I have recently been looking for something other than juice boxes to put in my stepdaughter's lunch for school, and considering the only other two things she'll drink are milk and water... my choices were limited! I'm always scared to put milk in her lunch because I'm afraid it won't stay cold enough, or it will leak. I know all too well that if milk leaks in a lunch box, by the end of the day it will smell horrible... Trust me! Considering these need no refrigeration I thought it just might work! So when I seen these on sale I thought it would be the perfect time to try them out on my kids.

I only bought one vanilla, one chocolate, and one strawberry. The vanilla one tasted exactly like a melted vanilla milkshake! I was sooooo yummy! The strawberry one was a little too sweet for my taste. It reminded me of the powdered strawberry Quick. When we finally got around to trying the chocolate one, my kiddo was in love! She informed me that it was "the best chocolate milk ever!" I personally thought it was a little too chocolate-y (yes, for me there is such a thing.)

Over all I think these are all great tasting, quick, and super convenient! I will definitely buy these again!

Product Review: R.W. Knudsen Organic Juice

While I was at Kroger this week I strolled through the organic aisles looking for good sales to take advantage of, and I came across R.W. Knudsen Organic Juices... $1.97!!! I've bought a couple of these before, and they were excellent. I thought I would use the sale to try a few more.
I ended up getting a Cranberry Pomegranate, which was crisp tasting, and very tart. I also got a Yumberry (which lives up to it's name), an Acai Berry, a Pineapple Juice, Prune Juice, and a Very Veggie.

Over the past couple of days I've managed to try them all. They were all excellent. Although I though the acai berry was a little funny tasting by it's self, but when mixed with one of the others it became as yummy as ever! The best part about these is that they're completely organic!

Product Review: Flax Plus® Red Berry Crunch Cereal

I have been making a solid effort to eat a little better. By eating more organic food, more local, fresh food, and by making sure I eat well rounded meals. The one thing my diet has always lacked is fiber.... fiber, fiber, FIBER! It seemed that no matter what it was, if it was high in fiber... I didn't like it.

So when I went grocery shopping last time, I was cruising down the organic isle and I came across a cereal by Nature's Path called Flax Plus® Red Berry Crunch. Normally I will bu y the Special K cereal that has the berries in it, but this time I thought what the hey, it was on sale and didn't look like it would kill me.

Then a couple days after I bought it, my dear, sweet fiance went digging through the cabinets looking for the special K. That's when I dropped the bomb that *gasp* I bought something else!!!!!! Being the ever-so adventurous soul that he is, he got a big bowl. When he finally worked up the nerve to eat the first bite, the strangest look came across his face. "What's wrong?" I asked... To which he replied, "It tastes like what you would expect a cereal high in fiber would taste like!"

Now coming from him, this was not a good thing.... Needless to say, that put me off trying it for a while.




So, this morning, after everyone was taken where they needed to be I decided to brave the previous review and try it for myself.




The cereal itself looked o' so yummy! I filled about half a bowl, then tossed a bit of granola on top, just for good measure! I took the first bite and was completely surprised by how sweet it was! I'm not sure what I was expecting (cardboard maybe) but the cereal was really, really good. The berries were nice and tart, and the flakes were crunchy goodness! I'm not sure where my fiance is coming from on this, but I think that this was one of the best cereals I've had in a long time (definitely the best organic).
