I sat down with my google reader tonight, and noticed that there were a lot of great things recently posted. I thought I would post some links here so you can go look for yourself.

As everyone can see, there have been a lot of changes going on around here! I hope that all of you will take a moment to check out the pages I've put up. I'm cooking dinner and making up my meal plan for the month. When I'm done I'll be back to share the yumminess I cooked for dinner.... Baked Penne with Four Cheeses! Yum!

I know, I know... I have been slacking big time on the blog. I have recently found this site Springformit.com! It is single-handedly getting me organized with this blog. I will make a big post about that site next week. Everyone should go check it out.

It'a time for the next blog hop! This week everyone is blogging a question, so that all their readers can answer!
My question is....

What is your favorite recipe? Why? 

When I first starting reading (and posting) cooking blogs, I noticed that everyone came up with these amazing recipes all on their own. So I told myself that I would come up with an amazing recipe all on my own, and below was the results. It is a very yummy (and pretty simple) dish!!!!


Chicken and Penne with Tomato Sauce

Pasta
12 oz Whole wheat penne
1 ½ T Extra virgin olive oil
2 T Garlic powder


Chicken
4 Chicken breasts
2 T extra virgin olive oil
¼ C. White cooking wine
1 t. crushed red pepper flakes
3 T Italian seasoning
Salt and Pepper to taste


Sauce
20 oz tomato sauce
1 can diced tomatoes
1 C salsa
½ C green pepper, diced
½ C sweet red pepper, diced
½ C onion, diced
1 T extra virgin olive oil
4 T Italian seasoning
1/8 C Green Chilies
Salt and pepper to taste

Chicken: Trim excess fat off of chicken breasts. Score chicken 2-3 times across top. Place chicken, oil, wine, and spices in Ziploc bag and shake. Marinade in refrigerator for at least 2 hours.
Remove chicken from bag and place on heated grill. Cook thoroughly.

Pasta: Cook pasta according to directions on package. Drain, add oil and garlic powder. Toss to coat.

Sauce: Heat oil in a large skillet. Add onions, green peppers, and red peppers; Sauté till tender. Add remaining ingredients to pan and simmer for 10-15 mins.

Top the pasta with chicken and sauce.
Serves 4

Roasting a Pumpkin

I had a pumpkin left over from when we were in our carving crave! So I went on a hunt for how to roast it, so I can use it for pies and such.

Here's the best way I've found :)

It's that time of year again

Now that fall is in full swing... It's time to make some of those fall family favorites. This time of year I love homemade chili, veggie beef soup, pumpkin pie, baked apples, and all the other warming treats. I'm going to take a few days and post some of my favorite fall family recipes!!

How about some homemade pumpkin and apple pie spice! This time of year I go through soooo much pumpkin pie spice, so I was overjoyed when I finally found the perfect blend of spices at home, instead of having to buy it!

I found these mixtures over at Baking Bites and so far they've seemed to work perfect!

Pumpkin Pie Spice
1/4 cup ground cinnamon
2 tbsp ground ginger
2 tsp ground cloves
1 tsp ground nutmeg*
1/2 tsp ground cardamom (optional)

Apple Pie Spice
1/4 cup ground cinnamon
1 tbsp ground allspice
2 tsp ground nutmeg*
2 tsp ground ginger
1/2 tsp ground cardamom (optional)

Combine all ingredients for desired mix and blend well. Store in a small, airtight container. Feel free to experiment with amounts to get a blend that works for you.

*If using freshly ground nutmeg, you might want to cut back a little bit because the flavor can be quite strong. Since you’re going to be storing the mix anyway, it is not crucial to use freshly ground here.

I was going through my google reader today and came across an amazing recipe, that I'm dying to try!

Our Best Bites always has some amazing recipes, but this one for Cheesy Garlic Bread Swirls just looks terrific! Check out these pictures!!!


I suggest everyone head on over and get the recipe for this gooey bread! I'll let you know how it turns out!

My busy life!

So, I realized today, that I have to start blogging more. I have all this stuff going on and I was using it as an excuse to not blog. But in reality it would probably help me to blog about it... Keep it all organized and get my thoughts out!

I have so much going on lately. My fiance's and I are hosting a baby shower for his best friend. The mother-to-be is vegetarian so I'm trying to make the party mostly meat free! It has been fun finding some new recipes that I wouldn't normally look for!

I was asked to participate in what's called a "sample box". Business' send in samples of their products and these people will box them all up. Then people can buy a "sample box" full of all these goodies for $22!!! There is all kinds of stuff in these boxes, like melts, scrubs, bath , body, tarts, candles, gourmet foods, jewelry, coupons, discounts, all from some of the best etailers on the web! Plus, I have decided to set up a booth at our local flea market to see if I can do well out there. So I'm trying to build up my inventory, plus add some variety to it! I'll post some pictures of my products as I finish them!
