My question is....
What is your favorite recipe? Why?
When I first starting reading (and posting) cooking blogs, I noticed that everyone came up with these amazing recipes all on their own. So I told myself that I would come up with an amazing recipe all on my own, and below was the results. It is a very yummy (and pretty simple) dish!!!!
Chicken and Penne with Tomato Sauce
12 oz Whole wheat penne
1 ½ T Extra virgin olive oil
2 T Garlic powder
Chicken
4 Chicken breasts
2 T extra virgin olive oil
¼ C. White cooking wine
1 t. crushed red pepper flakes
3 T Italian seasoning
Salt and Pepper to taste
Sauce
20 oz tomato sauce
1 can diced tomatoes
1 C salsa
½ C green pepper, diced
½ C sweet red pepper, diced
½ C onion, diced
1 T extra virgin olive oil
4 T Italian seasoning
1/8 C Green Chilies
Salt and pepper to taste
Chicken: Trim excess fat off of chicken breasts. Score chicken 2-3 times across top. Place chicken, oil, wine, and spices in Ziploc bag and shake. Marinade in refrigerator for at least 2 hours.
Remove chicken from bag and place on heated grill. Cook thoroughly.
Pasta: Cook pasta according to directions on package. Drain, add oil and garlic powder. Toss to coat.
Sauce: Heat oil in a large skillet. Add onions, green peppers, and red peppers; Sauté till tender. Add remaining ingredients to pan and simmer for 10-15 mins.
Top the pasta with chicken and sauce.
Serves 4

one of my all time favorites is a old standby! I love to make Banana Nut Bread in the fall and I have tried everything from 'totally from scratch' to premade mixes....this old basic from Bisquick, however, is still the best.
3 cups Bisquick
2/3 cup sugar (or substitute)
2 eggs
1/2 milk
1 cup mashed bananas
2/3 cup chopped nuts
grease pans, mix all ingredients until moistened and pour into pans
bake 50-60 minutes at 350 degrees, cool!

Sour Cream Apple Pie
Crust:
1 cup Flour
3 ounces cream cheese, softened
¼ pound of butter
Filling:
1 2/3 cups sour cream
1 cup sugar
1 large egg
1/3 cup flour
2 teaspoons vanilla extract
½ teaspoon salt
6 large apples, peeled, cored and sliced
Topping:
1 cup chopped nuts
½ cup flour
¼ pound of butter, softened
1/3 cup sugar
1/3 cup brown sugar
1 Tablespoon of cinnamon
Pinch of salt
Combine crust ingredients and blend with pastry cutter. Press into a 9” deep pie dish. Set aside.
Combine all of the filling ingredients except for the apples. Stir the apples into the mixture and pour into the crust.
Bake pie at 450 degrees for ten minutes. Reduce heat to 350 degrees and bake an additional 30 – 35 minutes.
While the pie is in the oven, loosely mix the topping ingredients. Spoon over the baked pie and bake an additional 15 minutes.
Note: Filling is enough for two pie. Double crust recipe and prepare 2 pans.

Monkey bread is the completely nutritionally absurd dessert "breakfast" that the Nordyke Family consumed for Christmas brunch every year when I was growing up. And it seemed to pop up for birthdays a lot during the year as well....yum!
Monkey Bread
Preheat oven to 350 degrees.
Use 4 cans of biscuit (the "layered" kind works best) and cut each biscuit into quarters. Putting in a few quartered biscuits at a time, shake the pieces in a gallon sized baggie that contains 1cup sugar and 1/2tsp cinnamon (refill as necessary). Make sure each piece is coated, and place quarters into a greased bundt or loaf pan.
Melt 1/2cup (1stick) butter, 1/2cup brown sugar, 1/4tsp cinnamon in own dish. Rough 30 seconds. Stir to make sure brown sugar is dissolved, then pour everything over the quartered coated biscuits.
If in bundt pan, bake for 20-30 minutes. Loosely over with foil for last 10 minutes.
If in loaf pan, bake for 30-40 minutes. Loosely over with foil after 25 minutes.
Then pour some milk and prepare for carmelly coated awesomeness!
This is a YUMMY favorite in our house!
Scallopped Vadalia Onions
This recipe is AWESOME!! It is so easy and so DELICIOUS! I love onions and would put them in everything if my family would let me! lol
For this recipe, you will need:
6 large Vadalia onions, thinly sliced
8 tbsp. (1 stick) of butter
2 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
1 tsp. dry mustard
1 cup milk
8 oz. grated cheddar cheese
1/2 cup seasoned bread crumbs
melted butter for topping - about 2 tbsp.
Sauté onion slices in 4 tbsp. butter. Melt 4 tbsp. butter in a separate pan; stir in flour & seasonings and cook for 1-2 minutes. Slowly stir in milk and cheese, stirring constantly until cheese is melted and mixture thickens.
In a 1-quart baking dish, alternate layers of onions and sauce. Sprinkle top with crumbs and drizzle with melted butter.
Bake at 400° until browned - about 15-20 minutes.

oh wow... they all sound yummy... I think I might have to try the Scallopped Vadalia Onions with dinner tonight!
